Pancakes pancakes pancakes!
Who can resist yummy fluffy pancakes that are homemade, these are of course griddle cakes rather than the usual crepe cakes that we all know and love and of course make on pancake day.
When I am feeling super lazy I often just buy in pancakes from the stores but this time I didn’t have any in the house, but what I did have was an abundance of eggs and flour, this is a simple recipe that I used to create these delicious pancakes, or so I’ve heard, mummy didn’t get to taste any of her creation but the children gobbled them up and left none for me!
INGREDIENTS –
135g Self Raising flour
1/2 teaspoon salt
2 tablespoons of caster sugar
130ml milk
1 large egg
2 tablespoons of melted butter.
METHOD –
Sieve the flour, sugar and salt together into a bowl and in another bowl mix in the egg, milk and melted butter.
Add all the ingredients together and mix with a fork or whisk to make sure there are no lumps and bumps.
Prepare a frying pan with some oil and start to drop in the mixture, I did three at a time as my frying pan was pretty big, once they start to bubble on the top side, flip them over until both sides are cooked.
AND SERVE!
We had ours with blueberries which always go down a treat in my home and sprinkled on some icing sugar for a hint of extra sweet but really you can serve them with whatever topping you like! This is such a simple and easy recipe to repeat over and over again and as I have said, the children love them.
